oh dear, life has been busy. my bio mum is in from the states and i have been sick. my mother has stolen one of my cookbooks with my premission...lol i made more of my just can not have one cookies aka crack cookies for soliders in iraq...so was way busy with that..over 12dz cookies. i made a really yummy creamed carrot dish last week that was to die for... and simple to make so here it is 1 bag carrots, sliced thinly ( i used white/yellow carrots) 1.5 C broth (chicken or veg) 250ml heavy cream salt and pepper to taste 2 pats of butter cook your carrots with the broth until tender and reduce the broth. once broth is reduce by 2/3. add your cream and butter. stir until thicken. if to thin add a touch of thicking agent like tapocia flour/cornstarch/wondra salt and pepper to taste. serve hot
