Pumpkin Part 1

So I have never cooked with fresh pumpkin before. Not even sure I have cooked with canned pumpkin either. Kroger had some pie pumpkins on sale and I had a few interesting recipes that I wanted to try out. First recipe that I tried was a pumpkin polenta. Fairly easy in execution. Roast the pumpkin and add it to the polenta with some cheese. Creamy and good. I am thinking that I may double the recipe for my work Thanksgiving potluck. However, the palates around here are a little less than sophisticated so I may have to label it as GRITS. Most peeps around here don't know what polenta is, and then if you go and add some suspicious "veggie" like pumpkin, well, no one would touch it.
