My Lactose-Free Corner
Why I want to be mentor in this category:
I have been living this way of life for the past 15 years.
What inspires me in this category:
If you see someone suffer with this allergy, it does inspire you to be proactive so they will not suffer anymore.
Experience:
When my daughter was diagnosed with lactose intolerance, I went to the store, spending 3 hours reading labels, and knew I was going to have to start making things on my own from scratch or half scratch. I also cook for people with milk allergies.
Biggest Lesson Learned:
That plain soy milk can be substituted in a lot more recipes than you would think. It is also very easy to make soy milk with a soy milk maker.
Books, classes, teachers that have helped me:
Reading anything I can find on the internet, and just learning how to read labels.
Education, Awards, Pro Experience:
I cook for a living for a sorority during the school year, and cook at home this way. I am in the middle of writing a cook book, that will have a lactose allergy section in it.
My Tips:
- A lot of times, people with lactose allergies can still have yogurt, use yogurt instead of sour cream in recipes.
