My Cheesecake Corner
Why I want to be mentor in this category:
I have developed my own, or have used over 60 recipes and would like to help a new baker.
What inspires me in this category:
Cheesecake is not my first choice when desserts are offered, but I seem to have a natural affinity for making them.
Experience:
I've been making and selling cheesecakes for almost 40 years.
Biggest Lesson Learned:
Never shock a cheesecake by abrupt temperature change or it will crack.
Books, classes, teachers that have helped me:
I always try to be the best at what I do, consequently, many books, cooks and friends have had a hand in my expertize. Also, knowing the Hough brothers, of Hough Bakery has helped.
Education, Awards, Pro Experience:
My cheesecakes are highly requested. They sell like hotcakes at bake sales.
My Tips:
- Most cheesecakes love a bain-marie!
My Misc. Bread Corner
Why I want to be mentor in this category:
I would like to answer questions and solve problems because I didn't have anyone to ask when I was learning.
What inspires me in this category:
There is nothing as welcoming as the smell of bread baking in the oven!
Experience:
I've studied quite a few books as well as taken classes on bread making. I started baking bread when I was first married at 18 years old.
Biggest Lesson Learned:
I've learned that steam is a very necessary commodity to bread making.
Books, classes, teachers that have helped me:
I have studied and own books dating back to the turn of the century on pastries as well as the newer bread machines of which I own four models at present!
Education, Awards, Pro Experience:
I've learned from four generations of my family as well as a number of ethnicities.
My Tips:
- The more risings you allow your breads... the more flavor is developed.
