MOM'S QUICHE
INGREDIENTS

- 1 lb. hamburger
- 1/4 chopped onion (can use minced dried onion)
- salt and pepper to taste
- 1 egg
- 1/2 c. mayo (I use light)
- 1/2 c. milk
- 1 T. cornstarch
- 1/2 cup swiss cheese
- 1/2 cup cheddar cheese
- 1 pie crust
DIRECTIONS
Put pie crust in pie plate (or buy one already in pie plate)
Brown hamburger meat with onion and a little salt and pepper.
Drain off all fat.
Beat 2 eggs. Add mayo, milk and corn starch. Mix cheese into sauce. Add meat and pour into pie shell.
Sometimes I double the milk, mayo mixture and cheese so it is puffier. I almost always add 3/4 cup of each cheese even without doubling the milk and mayo. If I double, I just add 1 cup.
Bake at 350 (I think, I'll check) for 30-40 minutes. If making ahead of time, bake for 25 minutes until set and then freeze or put in ice box to finish baking when ready to eat.
